Our NO 66, Shakisso is an organic, Rainforest Alliance‑ and Fairtrade‑certified coffee that captures the Guji Highlands’ lightness and vibrant fruit in a clean, contemporary cup. The aroma opens with ripe peach, Earl Grey and a soft hint of vanilla; on the palate, lively citrus merges with stone‑fruit sweetness, while a fine, balanced acidity keeps everything vivid yet harmonious. The sweetness is generous and silky, and the finish lingers with a wine‑like clarity free of harsh edges.
The beans come exclusively from Shakisso Farm, 1350 metres up in the Guji highlands, where pioneer Haile Gebre—known as “The Godfather of Guji”—has transformed semi‑forested land into a reference point for Ethiopian specialty coffee. After harvest, the cherries are processed by the classic washed method: a full day of fermentation followed by slow drying on raised beds. This gentle approach preserves the floral top notes and lets the pure fruit character shine through.
