Produced by Don Mayo Micromill, this coffee showcases sweetness, complexity, and the playful depth that defines modern fermentation processing.

The coffee is fermented for 36 hours in airtight tanks before being dried for 10–12 days, creating a vibrant and layered flavor profile. In the cup, you’ll find notes of peach, banana, sherry, and fudge — an exotic mix of sweetness and light fermentation tones that evolve beautifully as the coffee cools. The acidity is gentle, yet the fruit remains pronounced, offering both freshness and roundness in perfect balance.

Behind this remarkable coffee is Pablo Bonilla, whose family has been growing coffee in the Los Santos area for three generations.
