This lot from El Salvador showcases the Black Honey process, producing a cup bursting with sweetness, freshness, and refined fruit character. It’s a coffee that challenges tradition and reveals new layers of flavor with every sip.
In the Black Honey process, about one-third of the cherry skin is removed before drying, allowing the sticky fruit mucilage to stay on the bean. As the coffee dries slowly, the fruit pulp darkens, developing a deep, honey-like sweetness and complexity. The result is a vibrant espresso with incredible balance — full-bodied, yet bright and juicy.
Expect rich fudge sweetness intertwined with notes of sweet pomelo and delicate citrus, all carried by a silky texture and clean finish.
